Rustic Mushroom Bruschetta (serves 2-3 people)
Ingredients:
2 cups exotic mushrooms sliced
Chantrelles
Black Trumpets
Crimini
Shiitake
2 tbsn Olive oil
1/2 tbsn butter
1 tbsn shallot minced
salt & pepper (to taste)
2 tbsn Balsamic vinegar
2 tbsn Red wine
Crusty artisan bread
1 cup Fresh Herbs
Italian Parsley
Chervil
Method:
1) Clean mushrooms of any excess debris and rinse under cold running water. Do not soak mushrooms.
2) Clean fresh herbs and remove the leaves from the stems.
3) Heat olive oil in a sauté pan until the oil shimmers and moves quickly throughout the pan.
4) Add the whole butter, while the butter is melting add mushrooms to pan and sauté until mushrooms develop a golden brown color and has a firm texture. Add the shallots.
5) Slice bread and brush extra olive oil, season with salt and pepper. Grill or broil the bread until golden brown. Set aside.
6) Once mushrooms are golden, add ½ of the balsamic vinegar and two tablespoons of red wine. Let the liquid reduce until almost dry.
7) Season the fresh herbs with salt, pepper and dress with extra olive oil and balsamic vinegar
8) Place the mushroom mixture on top of the grilled bread and top with the fresh herb salad.
