2 8oz Flat Iron Steaks
3 Tbsp finely ground coffee
1 tsp ground cinnamon
½ tsp cocoa powder
2 Tbsp kosher salt
1 Tbsp fresh ground pepper
Black pepper cranberry butter (optional)
1 stick softened butter
1 Tbsp cracked black pepper
1 tsp maple syrup
½ tsp vanilla extract
2 Tbsp whole berry cranberry sauce
Salt to taste
Make black pepper cranberry butter: Mix softened butter together with remaining ingredients using a rubber spatula. Season with salt to taste. Spoon mixture onto 12 inch length of plastic wrap, roll into cylinder, and place in fridge to firm up.
Mix coffee and steak seasonings together in small bowl. Remove steaks from refrigerator, season on both sides with coffee mixture (you will probably have some left over) and let come to room temperature for about 15 minutes. Heat a cast iron or heavy bottomed skillet over medium high heat until pan is hot, add steaks and sear until golden brown, turning once, about 2-3 minutes per side for medium rare depending on thickness. Remove from pan and let rest for 5 minutes. Slice steak against the grain and garnish with a pat of black pepper cranberry butter.
